Grilled Halibut with Puttanesca Salsa and Parmesan

Okay there is not enough being said for the women that are going through the weight loss because today on Bodybuilding.com there was a user that put her motivation level down from 9/10 to 6/10.

The reason for that lost of motivation was the eating. Okay we all know that we don’t like tasteless food; its normal for us girls not to like those foods that taste like vomit.  The problem is what are we going to do to make food both tasty and healthy? OMG? Can I do that? Yes, its very simple when it comes to cooking certain things and I am going to give one free recipe for starters that looks fattening but, its the complete opposite.

Grilled Halibut with Puttanesca Salsa and Parmesan

  • Prep Time: 10 minutes
  • Cooking Time: 10 minutes
  • Serves: 4 people

 

Instructions

1. In a medium saucepan, combine the orzo, broth, and wine. Bring to a boil and stir; reduce heat to low. Cover and simmer until orzo is just tender, about 12 minutes. Stir in the Parmesan and black pepper. Cover and set aside. 2. While orzo is cooking, heat a grill pan over medium-high heat. Brush the halibut with 2 teaspoons of the olive oil and season with 1/4 teaspoon of the salt. Grill until just cooked through, 3 to 4 minutes per side. Transfer to a platter. 3. Combine the tomatoes, olives, and capers in a medium bowl. Warm the remaining olive oil in a small skillet over medium heat. Add the garlic and red pepper; saute until just fragrant, about 30 seconds. Stir in remaining salt. Toss garlic mixture with tomato mixture. Add basil and toss well.

  • fat-free reduced-sodium chicken broth 1˝ c.
  • dry white wine Ľ c.
  • freshly grated Parmesan 2 tbsp.
  • freshly ground black pepper 13/100 tsp.
  • 4 halibut fillets 6 oz.
  • olive oil 4 tsp.
  • salt ˝ tsp.
  • grape tomatoes, quartered 1 pt.
  • large pitted Kalamata olives, slivered 8 can(s)
  • drained capers 1 can(s)
  • garlic cloves, minced 2 can(s)
  • crushed red pepper 13/100 can(s)
  • slivered fresh basil 2 tbsp.
